Components (for 6–8 portions)
One and a half cups (190g) maida all-purpose flour
One cup, or 200g, of sugar
120ml, or ½ cup, softened butter
Two large, room-temperature eggs
120ml, or ½ cup, of milk
1 ½ teaspoon of baking powder
One teaspoon of vanilla extract
A dash of salt
Step 1: Warm up and get readyStep
Set the oven temperature to 180°C (350°F).
Line an 8-inch round cake pan with parchment paper and grease it.
Step 2: Cream Sugar and Butter
Beat the sugar and butter together in a large bowl until they are light and fluffy. For a soft sponge, this step is crucial.
Step 3: Include the vanilla and eggs
Add the vanilla extract after beating in the eggs one at a time.
Step 4: Mix the Dry Components
Sift the flour, baking powder, and salt in a different bowl.
Step 5: Mix Wet & Dry
Add the dry mixture to the butter mixture, alternating with milk. Mix gently until smooth (don’t overmix).
Step 6: Bake
Pour the batter into the prepared tin and smooth the top.
Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
Step 7: Cool & Serve
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.
Dust with icing sugar, frost with buttercream, or serve as is.
